Leek, apple and celery soup

Another soup for the cold winter days.

Ingredients:

1 leek (washed, trimmed, halved lengthwise and chopped)

1 small bramley apple (peeled and chopped finely)

1 small onion (peeled and finely chopped)

1 celery stalk (washed trimmed and finely chopped)

1 small potato (peeled and finely chopped)

a generous knob of butter

1 chicken stock cube dissolved in 1.5 pts of boiling water

salt and pepper

Serves 3

Melt and heat the butter on a moderately low heat. Sweat all the vegetables together until wilted. Add the chicken stock. Season with salt and pepper. Cover and let simmer for 25 minutes or until the vegetables are really soft. Take the pan off the heat and using a hand-held blender blitz until smooth. Check the seasoning again. Serve immediately with buttered warm crusted roll.

Fish and wedges with tartare sauce (by Pak Long)

After a long day at work last Saturday, I was too tired to think about dinner. So I said to Pak Long, “I am so knackered and I don’t feel like cooking at all tonight. Would you mind a fish and chips dinner?” He said “Not at all.” We dropped by at Nisa’s our local foodstore on the way home, grabbed a box of Young’s Haddock in batter, a bag each of frozen wedges and minted peas. As soon as we got  home, Pak Long set to work and 30 minutes later here’s the result. Okay, so this is cheating a bit. Everything was ready made. But at least it was better than the ones from the chippy at the high street and definitely less greasy. 😉
