spicy chicken wings and celeriac chips



This is the first time I ever cooked and eaten celeriac. Celeriac is a root vegetable and specifically the root of celery. Its not very popular maybe due to its ugly appearance. Honestly, it does not look anywhere near as appealing as a swede or a turnip. But it actually taste quite nice and for its low carbohydrate content is very good for diabetics. For the celeriac chips

1 celeriac root

2 tsp of mild curry powder

1 tsp of turmeric

salt and pepper

a drizzle of cooking oil ( I used groundnut)

For the spicy chicken wings

8 pieces of chicken (trimmed)

1 tsp of garlic powder

1 tsp of ground ginger

2 tsp of hot peri-peri sauce

1 tsp of light soysauce

1 tsp of dark soy sauce

salt and pepper

2 tbsp of cooking oil

Serves 2

Prepare the chips first. Chop off the top and bottom part of the celeriac and peel  the thick skin. Chop the peeled celeriac into thick chips. Drop them into rapid boiling water for no more that 2 minutes. Drain and throw them back into the saucepan. Now add the turmeric, curry powder, salt and pepper. Mix thoroughly. Drizzle the cooking oil. Spread them onto a baking sheet and bake in a hot oven (Gas mark 8 ) for 35 minutes.

Mix the chicken wings with all the other ingredients using your hand to make sure the wings are thoroughly coated. PLace on another baking sheet and bake for 35 minutes. Turn the wings after 35 minutes and  bake for another 15 minutes.

Serve hot with steamed vegetables. Hmmmm YUMMM!
